Ammonium glycyrrhizinate is found in liquorice (Glycyrrhiza glabra L.), it can be removed from the root, among other things. It is a complex steroid ester from the group of saponins. Glycyrrhizin can be used as an aromatic substance or as an anti-inflammatory.
